figgy cake.

apparently every three years i make fig-infused bourbon for my friend sonya’s birthday. hopefully we can get that to once a year. anyway, i am always left with fig pulp; about a cup rendered from a pint of reconstituted black mission figs that had been stewed with bourbon, orange zest, some tart cherries and a little ginger. i put the whole mess in the blender, then squeeze the bourbon out, leaving the figs. today i decided to make a figgy cake. oh my god… yum!

to the 1+ cup of mashed (moist but not soggy) fig pulp, add:
1/3 c bourbon
zest and juice of one lemon
juice of one orange
1/2 c brown sugar
4 T unsweetened cocoa
1 t chipotle pepper powder
1/2 t sea salt
1/2 cup whole wheat flour

beat together:
1 cup half and half
2 egg yolks
add to fig mixture

beat until stiff but not dry:
2 egg whites and 1/4 t cream of tartar

fold 1/3 of egg whites into fig mix.  add remaining egg whites and fold in completely.

pour mixture into 8″x8″ square pan that has been buttered, lined with parchment, buttered again, and dusted with cocoa.

bake in an oven preheated to 325 degrees for approximately 35 minutes [check at 25-30 min].
could also be baked in a bain marie.

allow to cool completely in pan. serve with whipped creme or creme anglaise.
